About our breads

All our breads are made with sourdough – a natural leavening method based on flour and water. The dough ferments slowly, which not only deepens and enriches the flavor but also makes the bread more digestible.

The slow fermentation process breaks down some of the gluten and phytic acid in the grains, making nutrients like minerals more readily available to your body. This often makes sourdough bread easier on the gut compared to quick-risen bread.

In addition, it contains a rich micro-life of natural lactic acid bacteria and yeasts, which provide the typical airy structure, longer shelf life and that characteristic, slightly fresh taste.

In short: sourdough is not only an artisanal choice, but also a conscious choice for taste, health, and digestibility. 🌱
